Weeknight thanksgiving in the crock pot

Crock pot turkey!

Ok so who doesn't love a delicious meal they can stick in the crock pot in the morning and have ready for them by dinner time? And even better its light! I used a boneless turkey breast but only because the smallest whole turkey i could find at my market was 15 lbs and i definitely don't need that much leftover turkey. But anyway you can get whichever you prefer.

Turkey breast or small whole turkey
1/2 C chicken broth Largely chopped onion 3 celery stalks chopped into 3 in pieces
onion soup mix
3 cloves chopped garlic
2 Tbs melted butter

Put chicken broth in bottom of crock pot top with onions, celery and garlic. Rinse your turkey and rub with onion soup mix (if you have the breast leave netting on until cooked) and then place in crock pot. Pour the melted butter over your turkey and place the lid on. Cook on high 1 hour and on low 7 hours remove and enjoy!
Leftovers are great for sandwiches.

77 g or around 2 nice sized slices of turkey has 78 calories and 2.4 g of fat.

Serve with whole wheat stuffing and green beans.

*TIP* The crock pot liners by reynolds are great for easy clean up!!
